After searching and searching for a gluten free and dairy free Banana Bread, I have finally found this awesome recipe.

Otherwise you could make this by hand. Simply mix the dry ingredients in one bowl, mix the wet ingredients in a second bowl, then mix the two together and bake. Easy!

Dry Ingredients: 

225 g buckwheat flour 
150 g coconut sugar
1 tsp bicarbonate of soda
1 tsp baking powder
½ tsp ground cinnamon
½ tsp salt
60 g rolled oats
20 g desiccated coconut
1 tbsp chia seeds, plus extra for decorating 

Wet Ingredients: 

3 ripe bananas, mashed lightly
1 egg (or egg replacer)
140 g yoghurt (I used plain coconut)
20 g Coconut oil
1 tsp vanilla bean paste 

Today I made this recipe into mini loaves and cut down the cooking time to approx. 40 minutes. Otherwise, if you’re making a loaf it needs to cook for approx. 60 minutes. Oven temp 160 celsius.
