Dairy Free Tzatziki Dip

One of my favourite dips is tzatziki. So when I experimented with this combination using natural coconut yoghurt, I was thrilled. It takes about 5 minutes to put together, and it’s delicious. I like it quite lemony, so I will add extra lemon when I serve this. Enjoy!

Ingredients:

3-4 tablespoons natural coconut yoghurt (I use Pure Cocobella)
1/2 small cucumber, grated
1 tablespoon fresh mint, chopped
1/2 lemon, juice only
Mineral salt to taste

Method:

In a small bowl, mix all ingredients. Taste and add extra salt and lemon if you need. Use immediately or within a day.

Ways to Enjoy:

Serve as a dip with fresh vegetables and/or crackers
Serve as a salad dressing
Add to lamb or vegetable koftas
