Easy Peasy Orange Cakes

I saw this recipe on Instagram, and made it with a few of my own tweaks.

It's super delicious served with vanilla coconut yoghurt to make it completely dairy free and gluten free.

Ingredients:

  • 2 whole oranges

  • 6 eggs

  • ¼ cup brown rice syrup

  • 2 cups almond meal

  • ¾ cup plant vanilla protein powder (this is what I use)

  • 1 tsp baking powder

  • ¼ cup poppy seeds

Method:

Place the whole oranges in a microwave dish, half fill, and microwave for 10 minutes. Drain the water, and leave to cool for a few minutes.

In a food processor, blitz the cooled whole oranges, then add all the other ingredients and mix until blended.

Spoon into a loaf tin, or you  can use any type of muffin/cake moulds for these. I made 14 small cakes.

Bake for 20-25 minutes (small cakes) or around 50 minutes for a whole cake. Test with a skewer.

14 serves in total, and Per Serve: 10g protein, 11.5g carbs, 10.8g fat (this will vary depending on which protein powder you use).
