What's one of the most satisfying snacks?

The other day I baked a bit batch of potatoes in their skins, and it reminded me of how good cold potatoes are as a fulfilling snack, and also how good they are for us as resistant starch.

Resistant starch is that stuff that is awesome for our gut health - it feeds the good bacteria, it improves your insulin sensitivity and it keeps you full for longer.

When you bake a potato, then leave it to cool, it breaks down the sugars, leaving you with a super satisfying snack. The good thing is that potato is also portable, meaning you can pack your cold potato in your lunch bag, or beach bag, or hiking bag. Simple!

I like to bake my potatoes whole in their skins. I don't wrap them, I don't add anything, I put them directly on the oven rack and leave them for an hour in a moderate oven. Once cooled, store them in the fridge.
