Do you feel overwhelmed?

I was talking to my 22 year old daughter today. We both agreed that one of the biggest stressors in our lives today is that we are constantly being bombarded with information, negative news, fake news, what's right, what's wrong, what we should eat, what we shouldn't, the list goes on and on...it's no wonder we can become overwhelmed!!

I am here to give you my simple overview of what I eat most days, and I hope that you can take something from this and adapt if need be. 

If you are not sure how to plan your meals for the week, rest assured that I don't plan either! The secret is to keep it simple and repetitive. Here is what I do:

Breakfast
A protein shake. Simple, fast, nutritious, packed full of protein (30-40g). I nearly always have this. If not, I'll make an egg scramble with egg whites and a whole egg, and add an extra protein.

Lunch

A substantial salad. A bowl chock full of mixed salad leaves, a good serving of protein (usually chicken or tinned tuna), cucumbers (or other salad vegetables on hand), pickled cucumbers or sauerkraut, 100g of rice/quinoa, dressing.

Snacks

Hard boiled eggs, a small bag of popcorn, hummus and vegetables, cold meats, fruit, leftovers or anything else off my Protein Snack List

Dinner

A big serve of protein (keep it simple, such as a steak, piece of fish, chicken breast), together with a carb or starch such as sweet potato, potato or rice, plus green leafy vegetables. I like to have most of my carbs in the evening.

But isn't that boring?

Yes! It can get boring. But that's the point. It's low stress, it's simple, it's easy to shop for, it's easy to prep. No fancy or complex sauces. No complex recipes that take forever to cook. Meals are ready in 30 minutes.
